WHere is an easy take on a cocktail featured on a new cocktail list. Designed as a party-sized prepared mix that is bursting full of essence of a holiday season, which makes it excellent for your festive gathering. Reserve the remaining syrup you can use for brunch beverages, puddings, or for more rounds of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Put the listed items into a pan, heat until it reaches a simmer, mixing to dissolve. After that, turn off the stove and leave to reach room temperature completely. Pour into a sterilised bottle, close it and store chilled, it can be stored for about a month.
For the Batch Mix: Mix the specified spirits and syrup into a big jug, leave to sit for an hour, then pass it through best through a fine cloth, to ensure it's perfectly clear.
To serve: Pour 85ml of your premix to a cocktail shaker filled with ice, and stir gently for about 60 seconds to chill. Strain to a chilled martini glass or a similar vessel, garnish with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
